2011 was an uncharacteristically cool vintage prod ucing more relaxed subtle notes. Planted in 1970, Tapestry's own Bakers Gully Vineyard is the sole source for this wine. Our Cabernet Sauvignon vine is traditionally low yielding contributing to the concentrated colour, aroma and depth of the wine. Following tradition the wine was matured in premium French oak hogsheads for 18 months before bottling in early 2013.
Subtle mint, blackcurrant and supported eucalyptus, all typical characteristics of this variety in this vineyard. Oak influence adds sweet spice.
Elegant soft pallet, cherry-like fruit characters, round middle with gentle acidity and fine tannins balancing the palate.
This wine is easily enjoyed now but as all traditional Cabernet Sauvignon's will benefit from 6 to 8 years of maturation, after which time it should be decanted before serving.
Braised Kangaroo Shanks with wild thyme. Slow cooked u ntil meat is almost falling off the bones served with mash & steamed broccolini.
