Our Semillon is sourced from the Lawn brook vineyard which was established in 1986.
It lies on the floor of the Bickley Valley. Here the cold air settles over night, slowing the ripening process and preserving natural acid levels.
The vineyard has no irrigation and produces fruit of great freshness and purity.
After hand harvesting, the fruit is chilled before destemming, crushing and pressing.
Only the free run and light pressing juice fractions are taken. Once cold settled and racked, two thirds is fermented in new french oak puncheons with the remainder in stainless steel tank. Post ferment the two portions are blended in tank and stirred on lees for three months. This helps to achieve great palate weight and texture. The resultant wine has a rich textured palate without losing the crisp fresh acidity Semillon is revered for.
